The place I love discovering the new Omakase restaurants and Nagai Hokkaido cuisine is a new restaurant that opened recently in Suntec City. Hailing from Hokkaido, it’s the brand’s first overseas outpost after 29 years and is often frequented by politicians, celebrities and even the Prime Minister of Japan and the Japanese Imperial family.

Founding chef Shinchiro Nagai established the outlet in Hokkaido with his 54 years of experience alongside his son Makoto Nagai. Chef Makoto Nagai has 16 years of experience and now runs Nagai Hokkaido Cuisine Singapore. The layout of the Suntec outlet is a mix of regular tables and an L-shaped counter, along with a few private rooms.

The food There are 15 lunches starting at S$28 as well as four omakase menus, priced at S$98, S$138, S$198 and S$380. Each set and menu continues to focus on dishes prepared in the traditional local Hokkaido way, using ingredients ranging from produce to meats and seafood imported from Hokkaido.

I had the $138++ Omakase menu, a 6-course meal and here’s what to expect:

Aperitif
The highlight of the appetizer platter is definitely the Hokkaido prawn with shrimp roe.

sashimi
This course features Chef Shinichiro’s hand-carved ice slab sashimi on a custom-carved transparent ice rock. I had a good variety of fresh sashimi Hirame, Otoro, scallops, prawns, cod roe, salmon and octopus head layered on slices of freshly shredded pumpkin.

Grill
I had the yuzu miso glazed grilled salmon, served with a tomato encased in a cube of white wine jelly.

Chef’s specialty
This course features one of Hokkaido’s most popular seafood – Hokkaido king crab with Hokkaido potato. The thick fresh crabmeat is naturally sweet, and there is also a buttery flavor because the crab is sautéed with butter.

Main course
This course includes two huge sushi rolls stuffed with salmon, tamago, uni, ikura and tuna.

Dessert
A simple Hokkaido milk and sweet potato ice cream.

Getting mad A relatively seafood-centric menu that features Hokkaido’s famous exports such as their shrimp and crab. If you are looking for a more varied type of kaiseki omakase, such as those with wagyu beef, this might not be a suitable option.

Will I come back? It’s great that there is a good mix of lunch or dinner menu options to suit different budgets. The ingredients are on the whole very fresh, and if you’ve always been a fan of Hokkaido cuisine and seafood in particular, the omakase menu here might appeal to you.
